Taiwan Soy Sauce and Black Bean Sauces: Building Your Pantry

Taiwan produces some of the finest soy sauces in the world. Thick, dark 蔭油 (yìn yóu) made with black beans is sweet and complex—ideal for braises, stir-fries, and dipping. Lighter soy sauces are used for seasoning and dressings.
Douchi (fermented black beans) and black bean paste add earthy, salty depth to fish, pork, and vegetables. A little goes a long way. Store opened jars in the fridge.
When shopping, look for products with minimal additives. Traditional brands often list only soybeans, wheat, salt, and water. Use Taiwanese soy in place of Japanese or Chinese soy in recipes when you want a rounder, slightly sweeter profile.
